Crisp salty smoky streaky bacon, sweet juicy cherry tomatoes, lettuce leaves and cold chickpea pasta coated in a delicious zingy sour cream dressing, I love this simple BLT Pasta Salad.
Go for wholewheat pasta, or a lower-carb pasta like chickpea pasta for better, more stabilised blood glucose levels. I stock up on chickpea pasta from Aldi when they have it in their Special Buys!
Did you know, that cooking and cooling pasta alters the resistant starch? This means cooked and cooled pasta is tolerated slightly better than when eaten after being freshly cooked!

Ingredients
- 8 rashers smoked streaky bacon (or unsmoked if your prefer)
- 100 grams chickpea pasta
- 2 handfuls rocket (or lettuce leaves of choice)
- 12 whole cherry tomatoes halved
- 12 pieces cucumber chopped
- 100 grams sour cream
- 2 tbsp extra virgin olive oil
- ½ medium lemon, juice only
- 1 heaped teaspoon wholegrain mustard
- a good pinch salt and ground black pepper
Instructions
- Cook the pasta according to the packet instructions. Once cooked, rinse in cold water and set aside to drain
- Grill the streaky bacon to your liking. It can be done in advance and eaten cold or used warm on the salad (whichever you prefer)
- Add sour cream, olive oil, mustard and lemon juice to a bowl and whisk to emulsify. Season to taste
- Pour the dressing over the cooked cooled pasta and stir to fully coat
- Add the rocket, cucumber and tomatoes to the pasta and toss through
- Serve the pasta salad topped with pieces of streaky bacon

Add cooked chicken pieces to this salad to create the perfect chicken and bacon pasta salad!
