BLT Salad

This BLT Salad is simply delicious. Romaine lettuce, rocket, juicy ripe plum cherry tomatoes, cucumber, avocado, lots of smoked streaky bacon, topped with a sprinkle of homemade garlic croutons, yum!






Ingredients
For the salad
- 4 rashers smoked streaky bacon or unsmoked if you prefer
- 6 whole cherry tomatoes halved
- 1 handful romaine lettuce chopped
- 1 handful rocket
- ½ medium avocado pitted and sliced
- 6 slices cucumber
- a pinch salt and ground black pepper
- mayonnaise to serve
For the garlic croutons
- 1 slice bread gluten-free if needed
- 2 tablespoons olive oil
- 1 large clove of garlic finely sliced
Instructions
For the garlic croutons
- Pull a slice of well-tolerated bread apart into bitesize pieces
- Add a tablespoon of olive oil to a frying pan and heat on high
- Toss the pieces of bread through the hot olive oil, add the slices of garlic on top of the pieces of bread and then drizzle with another glug of olive oil to lightly coat everything. Fry on high for a minute or so, until the bread turns crisp and on all edgesTIP: lay the pieces of garlic on top of the bread to avoid it touching the bottom of the frying pan and burning
- Once crisp, drain the croutons on a piece of kitchen paper
For the salad
- Grill the streaky bacon to your liking. It can be done in advance and eaten cold or used warm on the salad (whichever you prefer)
- Prepare the salad by layering the ingredients in a bowl
- Top with pieces of bacon, the croutons, season and then serve with full-fat mayonnaise or vegan mayonnaise if you are dairy-free
