  • 250 grams beef mince
  • 1 medium red onion diced
  • 3 tbsp Greek yogurt full-fat
  • 1 tsp garlic granules
  • 1 good pinch salt and ground black pepper
  • 8 whole cheese slices or grated cheese
  • 2 heads little gem lettuces leaves removed, washed and dried
  • 1 medium tomato deseeded and diced
  • 2 large gherkins (optional) drained and diced
  • 8 rashers smoked streaky bacon

Other optional toppings

  • mushrooms washed and sliced
  • avocado pitted and sliced or smashed with a squeeze of lemon & seasoned
  • fresh chillies finely chopped
  • fried egg

  • When the onion has softened, add the yoghurt, garlic powder and seasoning (The yoghurt helps to moisten the meat.) Continue stirring until everything is well combined
  • Once cooked through empty onto a plate. Add a sprinkle of grated cheese on top of the meat at this point if you would like melted cheese
  • Fry the bacon in the frying pan and then lay on sheets of kitchen roll to drain any oil and set aside with the meat
  • Build up the lettuce cups by pulling off a washed & dried leaf, add plenty of meat, cheese, bacon, mushrooms, diced tomato and gherkins

Tweak this recipe to add your favourite topping, but beware of adding additional carbs (such as breaded onion rings, or sweetcorn relish) if you plan on serving with potato fries, chips, wedges etc.
These cheese bacon burger lettuce cups are best served with mayonnaise, low-sugar ketchup or a low-sugar burger sauce made with low-sugar ketchup.
