Well I know I do, but this means an extra side of pure carbs that just aren’t worth risking with GD and so it’s time to re-think the carbs and try something that won’t spike blood sugar levels through the roof…. queue my Cheesy Garlic Bread made with cauliflower.

With cauliflower pizza bases and breadsticks being a success, it made sense to try a cauliflower cheese garlic bread and it works just as well. So if you miss having a slice of garlic bread alongside your serving of pasta, then give this recipe a try.

Cheesy Garlic Bread

Ingredients

For the cauliflower base

  • 1 whole cauliflower approx. 800 grams in weight
  • 2 medium eggs
  • 50 grams parmesan cheese grated
  • 1 tsp dried oregano
  • 1 good pinch salt & ground black pepper

For the garlic cheese topping

  • 50 grams parmesan cheese grated
  • 50 grams mozzarella torn or grated (or cheddar)
  • 5 cloves garlic minced
  • 1 tbsp salted butter
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley chopped (optional)

Instructions

For the cauliflower base

  • Preheat oven to 200°c (fan) and line a baking tray with baking parchment paper
  • Rinse the cauliflower, remove the leaves and separate the florets into smaller pieces. Place cauliflower florets into a food processor and pulse until you create a rice like texture
  • Tip the cauliflower into a bowl, cover with cling film and microwave on high for 5-6 mins or until softened, then set aside to cool
  • Once cooled, place the cauliflower into the middle of a clean cotton tea towel or muslin cloth. Gather the edges of the cloth and scrunch/twist the top around. The cauliflower should be sitting in a ball in the cloth and you should keep twisting and squeezing to remove as much liquid as possible. It's important to squeeze out as much liquid as possible. The drier the cauliflower, the better the 'bread' base will be!
  • Add the cauliflower, eggs, parmesan, oregano, salt & pepper to a bowl and combine well
  • Divide the mix into 2 equal size balls, and flatten out onto the trays to about 0.5cm thickness using your hands or a spoon
  • Place in the oven to cook for 15-20 minutes or until the edges are starting to brown slightly

For the garlic cheese topping

  • Combine the garlic, butter and grated parmesan in a bowl
  • Remove the cauliflower bases from the oven and cover with torn pieces of the cheesy garlic butter, mozzarella and/or cheddar
  • Place the cauliflower cheese bread back into the oven and cook until the cheese has melted and is bubbling
  • Slice into pieces and serve!
