Ingredients

  • 1 medium chicken breast fillet skinless
  • a good pinch salt and ground black pepper
  • 2 tsp olive oil
  • 1 tbsp tomato purée
  • 1 tsp dried mixed herbs
  • 100 grams grated cheese

Instructions

  • Butterfly the chicken breast by slicing it so that it opens out like a book. Cover the chicken breast fillet with cling film wrap and bash with a rolling pin or meat beater/tenderiser to flatten it more
  • Heat some olive oil in a pan and add the chicken breast, seasoned to your liking. Flip the chicken breast to cook evenly on both sides
  • Once the chicken is cooked and just starting to golden underneath, move the chicken to a grill pan, topping it with the tomato purée, the dried herbs, your toppings, finishing with cheese. Grill for a few minutes until the cheese is melted and bubbling

Notes

Top the chicken breast with toppings of your choice. Good ideas include:
  • meats eg. pepperoni, chorizo, chicken, ham
  • fish eg. tuna, anchovies
  • different cheeses eg. cheddar, mozzarella, feta, ricotta, blue cheese
  • vegetables eg. tomato, peppers, onions, olives, courgette, artichoke, chillies
  • herbs eg. basil, oregano, chives
Toppings like sweetcorn and pineapple will increase the carb content and so it is best to stick to lower carb options for better blood glucose levels if serving alongside a small serving of starchy carbs such as potato, rice, couscous, pasta or bread
