Low Carb Chicken Cordon Bleu

This recipe is a low-carb version of Chicken Cordon Bleu. Succulent chicken breast, filled with oozy melted cheese and ham and coated in a golden crisp crunchy crumb, but not a breadcrumb in sight!

For some of us, certain carbs are complete no-gos and for some, this may be bread. If your body hates bread and you’re missing a crunchy crumb coating, then give this quick and simple recipe a try.

If you’re worried about this tasting nutty, then don’t be. You honestly cannot tell the coating is not breadcrumbs, proven by my three boys who devoured this in seconds telling me how yummy it was! They had absolutely no idea this wasn’t normal breaded chicken 🤫 and asked for this to be added to our favourite family meals to be made again!

No breadcrumbs also mean this is gluten-free and helps punch and really big nutritional punch by using almond and sesame seeds, perfect for growing children.

By not using breadcrumbs, this means we leave room for a small serving of starchy carbs, so I served mine with skinny fries. You can serve yours with whichever type of carb you enjoy and tolerate well and as always a nice green salad or serving of leafy green vegetables.

  • cocktail sticks for holding the stuffed chicken breasts together


  • 4 medium skinless chicken breast fillets
  • 2 medium eggs beaten
  • 4 slices ham
  • 4 slices cheese mozzarella, emmental, gouda, cheddar
  • 2 tbsp ground arrowroot powder (optional)
  • 3 tsp butter
  • 4 sprays olive oil (optional)

For the crumb coating

  • 100 grams ground almonds
  • 3 tbsp sesame seeds
  • ½ tsp garlic granules
  • ½ tsp dried thyme
  • ¼ tsp salt
  • ¼ tsp ground black pepper


  • Preheat the oven to 200°c (fan) and line a baking tray with baking paper or tinfoil
  • Prepare the crumb coating by adding all the ingredients into a flat dish and mixing well to combine
  • Add the beaten eggs to a separate dish
  • Add the ground arrowroot to another separate dish if using
  • Prepare the chicken fillets by slicing ¾ of the way through each breast to create a pocket
  • Add a slice of ham and a slice of cheese to each pocket, trim any excess cheese and ham that overhangs the pocket and place them inside the pocket
  • Seal the chicken breasts with cocktail sticks to keep the filling inside
    NOTE: The cocktail sticks may burn slightly when cooking the chicken, if you would prefer to avoid this you can soak the cocktail sticks in cold water before using
  • If using ground arrowroot, take a chicken breast and place in the arrowroot powder, turn over and rub all over to fully coat, then gently tap to remove any excess
  • Next dunk the chicken into the beaten egg, then turn to ensure the whole fillet is coated, then hold over the dish to allow any excess egg to drain
  • Finally, coat the chicken breast in the ground almond and sesame seed coating. Turn the chicken over and gently pat onto the chicken to ensure it is fully coated
  • Place the coated chicken breast onto the lined baking tray and repeat the process with the other chicken breast fillets
  • Space out the chicken so that they have plenty of room on the tray and dot butter in between the fillets
  • Place the tray into the centre of the oven to bake for 25 minutes or until crisp and golden and the chicken is fully cooked with the juices running clear
    Check the chicken halfway through cooking and spray lightly with olive oil if needed to encourage even browning
    Alternatively the chicken cordon bleu can be cooked in an air-fryer
  • Carefully remove the cocktail sticks before serving, then serve with a small serving of starchy carbohydrates of your choice and a green salad or leafy green vegetables
