Chocolate velvet
A rich velvety chocolate pudding

Chocolate velvet is a rich, dark velvety chocolate pudding.
It’s low carb, high in natural fat, nut free, dairy free, gluten free, plus it’s vegetarian and vegan friendly too (and the best bit is that it takes literally a couple of mins to make!)

Ingredients
- 1 large ripe avocado de-stoned, peeled and chopped
- 2 tbsp cacao powder or vegan approved cocoa powder
- 150 grams silken tofu
- 100 ml soya milk (or unsweetened almond or coconut milk)
- 1 tsp vanilla extract
- 1 tbsp sugar free syrup optional to taste
- 1 square dark chocolate optional curled/grated for garnish
Instructions
- Dice then mash the avocado with a fork so that it blends more easily (I find this stops my blender from becoming clogged and mixes a smoother mousse much better)
- Add all ingredients to a blender and blitz until smooth and velvety, adding the milk a drop at a time until you reach the desired consistency
- Add sugar free syrup or sweetener to taste. The chocolate velvet can be served immediately or chilled to set more firm and be served later
- Grate or curl some vegan approved dark chocolate over the top to garnish when serving
Notes
Add dairy free or vegan approved dark chocolate shavings on top, or crushed nuts
