Coleslaw is a great side dish to add to meals to increase the fibre and natural fats in a meal to help to pair, and nothing beats homemade coleslaw. What’s even better is that it’s so cheap and easy to make! Here’s my recipe for the best tangy yet creamy coleslaw!

Ingredients

  • ¼ medium white cabbage thinly sliced or grated
  • ¼ medium red cabbage thinly sliced or grated
  • 2 large carrots peeled and julienned or grated
  • ¼ large onion (optional) thinly sliced or grated
  • ½ medium lemon juice only
  • 125 grams mayonnaise (or vegan mayonnaise)
  • 2 tbsp double cream (or Elmlea Plant-Based Double Cream)
  • 1 tbsp apple cider vinegar (or white wine vinegar)
  • 1 tbsp dijon mustard (optional)
  • 1 good pinch salt and ground black pepper to taste
  • 1 tbsp fresh chives chopped (or fresh parsley)

Instructions

  • Finely chop/grate/julienne the veggies and place in a bowl
  • In another bowl, add the mayonnaise, lemon juice, double cream, apple cider vinegar, dijon mustard and stir until fully combined. Taste and season to your liking
  • Pour the mayonnaise dressing over the vegetables and toss gently to evenly coat. Garnish with plenty of fresh chopped chives or parsley
