Ingredients

  • 1 tsp butter
  • 600 ml double cream
  • 200 grams cheese any cheese you like, grated
  • 1 tsp mustard powder
  • 1 pinch salt & white pepper
  • 1 good pinch paprika (optional)
  • 1 large cauliflower leaves stripped and broken into pieces

Instructions

  • Cook the cauliflower by steaming or boiling in a pan of water until just cooked, then drain and set aside
  • Preheat the oven to 200°c (fan)
  • Add the butter to a hot pan to melt
  • Pour in the double cream and sprinkle in the grated cheese gradually (reserving some for sprinkling over the dish before baking), stirring continuously
  • Add the mustard powder, salt, pepper and paprika if using
  • Once the cheese has melted into the cream creating a cheese sauce, remove from the heat
  • Place the cauliflower in a baking dish. Pour over the cheese sauce and top with more grated cheese
  • Bake in the oven for 20 minutes or until the top is bubbling and golden
