  • 4 slices bread
  • 1 tsp butter
  • 1 tsp Dijon mustard
  • 8 slices ham
  • 1 batch low-carb béchamel sauce
  • 50 grams mozzarella grated or thin slices
  • 100 grams cheese grated (cheddar, or a mixture of cheddar, Emmental & Gruyère)
  • 2 medium eggs
  • 1 tbsp vegetable oil

  • Toast the bread lightly
  • Build the Croque Madame:
    1) Start with a piece of toast. Spread one side of toast with butter and some Dijon mustard
    2) Add a thick layer of low-carb Béchamel Sauce
    3) Add 2 slices of ham
    4) Add some mozzarella
    5) Add another layer of low-carb Béchamel Sauce
    6) Add the other piece of toast, spread with butter and Dijon mustard
    7) Add 2 more slices of ham
    8) Add another thick layer of low-carb Béchamel Sauce
    9) Top with grated cheese
