Croque Madame

Crunchy toast with plenty of ham, and cheese oozing with delicious creamy low-carb Béchamel sauce. A Croque Monsieur is the king of toasted cheese and ham sandwiches with all the cheese, ham and low-carb béchamel helping to pair the bread to give lower and more stabilised blood sugar levels. But if you add a beautiful fried egg on top, you’ve made yourself the queen of toasted cheese and ham sandwiches, the Croque Madame!

Ingredients
- 4 slices bread
- 1 tsp butter
- 1 tsp Dijon mustard
- 8 slices ham
- 1 batch low-carb béchamel sauce
- 50 grams mozzarella grated or thin slices
- 100 grams cheese grated (cheddar, or a mixture of cheddar, Emmental & Gruyère)
- 2 medium eggs
- 1 tbsp vegetable oil
Instructions
- Make the Low Carb Béchamel Sauce
- Toast the bread lightly
- Build the Croque Madame:1) Start with a piece of toast. Spread one side of toast with butter and some Dijon mustard2) Add a thick layer of low-carb Béchamel Sauce3) Add 2 slices of ham4) Add some mozzarella5) Add another layer of low-carb Béchamel Sauce6) Add the other piece of toast, spread with butter and Dijon mustard7) Add 2 more slices of ham8) Add another thick layer of low-carb Béchamel Sauce9) Top with grated cheeseThen repeat the process to make the other Croque Madame
- Place the Croque Madame in a hot oven or grill, cooking until bubbling and golden. While the Croque Madame is cooking, fry the eggs in a little oil, then place on a piece of kitchen towel to remove excess oil
- Serve the Croque Madame on a plate with the fried egg on top, season well with salt & black pepper
