Crunchy toast with plenty of ham, and cheese oozing with delicious creamy low-carb Béchamel sauce. A Croque Monsieur is the king of toasted cheese and ham sandwiches with all the cheese, ham and low-carb béchamel helping to pair the bread to give lower and more stabilised blood sugar levels.

- Make the Low Carb Béchamel Sauce
- Toast the bread lightly
- Build the Croque Monsieur:1) Start with a piece of toast. Spread one side of toast with butter and some Dijon mustard2) Add a thick layer of low-carb Béchamel Sauce3) Add 2 slices of ham4) Add some mozzarella5) Add another layer of low-carb Béchamel Sauce6) Add the other piece of toast, spread with butter and Dijon mustard7) Add 2 more slices of ham8) Add another thick layer of low-carb Béchamel Sauce9) Top with grated cheeseThen repeat the process to make the other Croque Monsieur
- Place the Croque Monsieur in a hot oven or grill, cooking until bubbling and golden
