Simple, fresh, quick and easy, this falafel and hummus salad takes just minutes to make and is great for packed lunches and picnics too.

You can use store-bought falafels and hummus if you prefer, or you can make your own. I have recipes for hummus and roasted garlic hummus, both work well in this salad.

Ingredients

  • 6 whole falafels homemade or store-bought
  • 3 tbsp hummus homemade or store-bought
  • 100 grams tinned chickpeas drained and rinsed
  • 1 handful salad leaves
  • 1 sprig fresh mint leaves torn
  • 1 whole radish thinly sliced
  • ¼ medium cucumber sliced
  • 6 small cherry tomatoes halved
  • ¼ medium red pepper sliced
  • 1 tbsp mixed seeds

for the salad dressing

  • 100 ml olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp agave nectar
  • a pinch salt and ground black pepper to taste

Instructions

  • Add all the ingredients for the salad dressing to a jar or tub with a lid and shake until emulisfied
  • Add salad leaves, torn mint leaves, radish, cucumber, tomatoes, red pepper and rinsed chickpeas to a bowl, drizzle with the salad dressing and toss through to coat
  • Plate the salad, add blobs of hummus, cold or warmed falafels and top with seeds
