Hi Jenny,
1) I have always used a good quality cocoa powder and a normal 70% or more cocoa content eating chocolate (rather than cooking chocolate), normally whatever’s on offer ie. Green & Blacks, Lindt, or Tesco/ASDA/Aldi’s own brands
2) If you swap to chocolate pieces in the muffins then it may make them harder to tolerate in the morning for breakfast. As a snack later in the day they should work, but I wouldn’t use them for breakfast unless you have pretty good tolerance
3) Scones I’ve never tried to make with coconut flour, but successfully made and tolerated wholemeal flour scones in my pregnancies. There is a recipe on the website, but I’ll need to check where I have it posted
