Frozen Yogurt Bark

This Frozen Yogurt Bark recipe is so simple, quick and easy, plus you can tweak it to meet your own dietary needs and preferences.

It’s the perfect sweet treat to snack on and even better in warmer weather when you want something cool to nibble on which won’t cause your blood glucose levels to soar.

If you don’t like to add sweetener to your diet, then there is no need to; just get sweetness from low-GI summer berries instead. Can’t eat nuts, then don’t add them. Love nuts? Use lots and swirls of peanut butter! Use a dairy-free alternative if you can’t or don’t eat dairy. Prefer tropical fruits, then use passionfruit, lime & coconut. Love berries, then sprinkle with sweet summer berries. If you prefer zingy, zesty flavours, then use plenty of zest and small segments to get a zingy hit! Base Yogurt Bark Ingredients

  • 500 grams yogurt full-fat Greek, SKYR, coconut, or soya
  • ½ medium lemon juice & zest
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2 tbsp sugar free syrup (or sweetener) optional, to taste

Berries & Coconut Topping

  • 6 whole strawberries thinly sliced
  • 12 whole raspberries
  • 20 whole blueberries
  • 1 tbsp coconut flakes


For the Yogurt

  • Line a tray or dish with baking paper with enough overhang that you can easily lift the yogurt out of the tray once frozen
  • Add the yogurt, the zest of a lemon and juice of half, vanilla and pinch of salt to a bowl and stir well until combined. If using, add sugar-free syrup or sweetener to your liking
  • Pour the yogurt into the lined tray, smoothing out to cover the surface (the larger the tray, the thinner the yogurt bark will be. Likewise, the smaller the tray, the thicker the yogurt bark will be). Drop or bang the tray on the work surface a couple of times to help evenly spread the yogurt

Add toppings/flavourings

  • Top with slices of strawberries, raspberries, blueberries and coconut flakes or toppings of your choice
  • Place the tray into the freezer for at least 2 hours or until completely frozen (this works well being left to freeze overnight)
  • Once frozen, remove from the freezer. Lift the yogurt out of the tray and break into pieces. Place the pieces into freezer bags or a lidded container and keep frozen, ready to be eaten

  1. Berries & Coconut (strawberry, raspberry, blueberry & coconut flakes)
  2. Fresh Berries, Nut & Seed Mix (berries, almonds, chia seeds & fresh mint)
Other flavour ideas:-
  • Tropical: 1 x passionfruit, 1 x kiwi, peeled and thinly sliced, 1 x lime (zest & juice), desiccated coconut & coconut flakes
  • Citrus: zest of lemon & orange, half an orange segmented, juice of a lemon and half an orange
  • Lime & Coconut: coconut yogurt with zest & juice of 1 lime, toasted desiccated coconut to top
  • Choc Nut: Peanuts (as many as you like) & 30g dark choc melted and drizzled
  • Black Forest Swirl: handful fresh or frozen cherries with 30g dark choc
  • Granola Crunch: mixed chopped nuts, seeds – mixed with sugar-free syrup to taste sprinkled over the top in clusters
  • Banana & Peanut butter: 1 small greener banana, finely sliced, 3 tbsp melted peanut butter to drizzle and a handful of peanuts
  • Vanilla Cheesecake Crunch: 2 vanilla pods (split lengthways and seeds removed), 150ml real dairy double cream or Elmlea Plant-Based Double Cream added to the yogurt and whipped in, topped with 2 crushed digestive biscuits
