Galettes | Gestational Diabetes UK

Traditional French galettes are thin pancakes made from buckwheat or a mix of buckwheat and another wheat flour. To help make these galettes more tolerable, I add flaxseed into the recipe to increase the protein and fat content.

Ingredients
- 75 grams buckwheat flour
- 2 tablespoon ground flaxseed
- 1 large egg beaten
- 100 ml whole milk or dairy-free milk
- 100 ml sparkling water
- 1 pinch salt
- 1 teaspoon butter or coconut oil for frying
- Fillings/Toppings of choice
Instructions
- Sift the buckwheat flour into a bowl, then add the milled flaxseed and salt
- Make a hole in the middle of the flour and add the beaten egg
- Mix ingredients into a smooth paste. Add a splash of milk, mix, then keep adding the milk bit by bit and then the sparkling water, mixing well until you have a well combined runny batter that would coat the back of a spoon
- Wipe some butter or coconut oil around a frying pan on a piece of kitchen towel, then heat on moderate heat. Once hot, ladle the batter into the pan and tilt the pan around to spread the batter evenlyNOTE: thin pancakes will be better to tolerate
- After 30 – 60 secs, you will be able to flip the pancake to brown on the other side
- Add the filling of your choice to the middle and fold the edges over to create an envelope. Finish in the oven if you add ingredients that need cooking, or flip the galette over in the pan to finish.The longer the galette is left to cook in the oven, the crisper it will become!

The UKHSA, Food Standards Agency and Food Standards Scotland are investigating an outbreak of Listeria monocytogenes linked to smoked fish.
