A tasty herby green pesto pasta salad, packed with flavour and simply delicious. Try using whole wheat or chickpea pasta for this dish with plenty of green pesto for flavour. The cheeses, pine nuts and oil all help to pair the carbs in the pasta.

  • 40 grams whole wheat pasta or chickpea pasta
  • 2 tbsp green pesto
  • 20 grams fresh parmesan shaved
  • 2 tbsp pine nuts toasted
  • 50 grams mozzarella
  • 20 grams sunblush tomatoes or fresh cherry tomatoes
  • 50 grams feta stuffed peppers
  • ½ handful fresh basil
  • 1 handful salad leaves
  • 2 tsp extra virgin olive oil
  • 1 tsp lemon juice
  • a good pinch freshly ground black pepper


  • Cook the pasta in salted water according to the pack instructions, drain and set aside to cool
  • Add the green pesto and some of the basil leaves to the pasta and stir well to coat
  • Lightly toast the pine nuts in a dry frying pan for a minute or two, until just golden and sprinkle over the pesto pasta
  • Top the pasta with parmesan shavings and serve with the salad, tomatoes, mozzarella and peppers. Finish with a drizzle of lemon juice, extra virgin olive oil and a twist of freshly ground black pepper
