Ingredients

  • 40 grams whole wheat pasta or chickpea pasta
  • 2 tbsp green pesto
  • 20 grams fresh parmesan shaved
  • 2 tbsp pine nuts toasted
  • 50 grams mozzarella
  • 20 grams sunblush tomatoes or fresh cherry tomatoes
  • 50 grams feta stuffed peppers
  • ½ handful fresh basil
  • 1 handful salad leaves
  • 2 tsp extra virgin olive oil
  • 1 tsp lemon juice
  • a good pinch freshly ground black pepper

Instructions

  • Cook the pasta in salted water according to the pack instructions, drain and set aside to cool
  • Add the green pesto and some of the basil leaves to the pasta and stir well to coat
  • Lightly toast the pine nuts in a dry frying pan for a minute or two, until just golden and sprinkle over the pesto pasta
  • Top the pasta with parmesan shavings and serve with the salad, tomatoes, mozzarella and peppers. Finish with a drizzle of lemon juice, extra virgin olive oil and a twist of freshly ground black pepper
