An alternative to my chicken breast pizza recipe, it’s very similar but can be cooked from start to finish in the oven, making it a great midweek recipe to pop in the oven. Try out these super-simple Hasselback Pizza-Topped Chicken breasts.

Ingredients
- 1 medium skinless chicken breast
- 1 tbsp tomato purée
- ½ tsp dried mixed herbs
- 100 grams grated cheese
- 1 tsp olive oil
- a good pinch salt and ground black pepper
Instructions
- Preheat the oven to 200°c (fan)
- Cut slices 2cm apart into the chicken breast across the top, deep enough to add fillings without cutting completely through the breast. Place the chicken into an ovenproof dish
- Add some tomato purée to each gap
- Sprinkle some dried mixed herbs into each gap
- Add sliced toppings into each gap (I used pepperoni & black olives)
- Sprinkle over grated cheese of your choice
- Drizzle a small amount of olive oil over the top of the chicken breast
- Cover with foil & place in the oven for 20 mins
- Remove the foil & cook for a further 5-10 mins (possibly longer depending on the size of your chicken breast) until cheese is bubbling and chicken juices run clear when you cut into it
Notes
I served mine with some sweet potato fries with mayonnaise and half a tomato with a green mixed salad

These Hasselback Pizza-Topped Chicken breasts work great with all the usual pizza toppings and you can give them a kick by adding chilli flakes, or sliced chillies too! Another option is to create a paste from my Tikka Masala or Korma recipes to create a Hasselback Curry filled Chicken Breast Top the chicken breast with toppings of your choice. Good ideas include:
