You go from having your world revolve around what you’re eating, when you’re eating and when you’re testing, lots of appointments to check how you’re getting on, extra scans and monitoring of baby, to . . .

. . . Er, hello?! Where’d everyone go??? So is this it??? Do I have diabetes, what happens next?!
⠀
I’m not saying it’s like this everywhere, but it’s certainly been the case in the 3 different hospitals I’ve given birth in across England & Scotland and I know many Mums in the Facebook group mention feeling like this too.
⠀
You can be left feeling a bit lost and confused. There’s all this attention and focus, then once the baby is born it’s almost like you’re the only one who remembers anything about your GD.
⠀

Although a diagnosis of gestational diabetes means extra monitoring, extra scans and a ‘label’, plus additional checks and monitoring of your baby post birth, YOU are the only person who can decide if you can have a home birth or not. It’s not a case of being ‘allowed’, it’s about understanding any additional risks and making an informed decision.

Instagram post 2155968502905108677_2211632433 Fruit although packed with so many beneficial vitamins, minerals, antioxidants and fibre can be really tricky to tolerate with gestational diabetes 🥭🍑🍌🍉🍇🍍

Many of us would normally think that a fruit salad pot like this one would be a great choice for a healthy diet, paired with a healthy low fat yogurt, surely this should be a great choice during pregnancy?
⠀
But eating this as a snack or even as a dessert after a main meal means you’ll be eating the equivalent to 10.5tsp of sugar with little to no fat to help slow down the release of the sugar into your bloodstream. With gestational diabetes, that is a big hit of sugar for your body to process.
⠀
Unfortunately fruit is a simple carb that spikes blood glucose levels very quickly.
⠀
This means that you have to be careful which fruit you eat, opting for lower GI options such as cherries, berries, kiwi & green apples and to help make them more tolerable add some good natural fats and protein. 🥝🍒🍓🍏🍋🥑🧀🥜🥚🍗🐟
⠀
Be wary of low fat yogurts like Müller light which contain almost the equivalent of 3tsp of sugar per pot, they also contain my least favourite artificial sweetener, aspartame 😖
⠀
Switch the Müller light yogurt for a full fat Greek yogurt, Alpro soya yogurt, Lindahls Kvarg or Danone Light & Free Skyr yogurt which all have around HALF the amount of carbs per 100g compared to the Müller.

For some, even when paired, fruit can still be very difficult to tolerate and therefore has to be avoided until after birth (the reason why lots of us crave a big bucket of fresh fruit salad after birth!)
⠀
Just because you need to limit fruit, doesn’t mean you can’t still eat ‘healthy’ and get your recommended 5-a-day. It just means incorporating plenty of low GI veg and salad into your diet.

Instagram post 2155867293292519221_2211632433 This took literally 2 minutes to make. 2 eggs scrambled in a saucepan, a chopped tomato and a couple of slices of red pepper, served with a twist of seas salt and black pepper.

Lots of ladies want quick breakfast ideas as they are busy getting ready for work or getting children ready for school in the mornings, yet we often forget how quick eggs are to cook 🥚 🥚 🥚Crack them in, heat on high and stir every few seconds and bam! Perfect scrambled eggs, great for anyone struggling with tolerating starchy carbs in the morning. Adding a tomato and slices of pepper mean that there are still some simple fibrous carbs added, but no way near the big hit you will get from a piece of toast.

If you tolerate bread in the morning then add a slice of a better toast smothered in real butter.

English but married to a Scotsman, living in the Scottish Borders, it was time to try to create something that my mother-in-law makes soooo well.
⠀
Based on Flora’s Scottish shortbread recipe, I’ve created something that I never thought possible, the perfect low carb, sugar free Scottish shortbread!!!
⠀
Crisp outside, SO buttery and soft yet crumbly in the middle, this one was a definite OMG moment when I tried it (and the boys have wolfed down a piece each already)
⠀
Trying to make it Instagram worthy, I even walked over the road with my freshly baked shortbread, a sprig of heather and my camera to take a couple of pics on the drystone dyke (I take most my food pics on the mossy drystone dyke walls of my garden) with the sheep in the field as my backdrop and to try to capture what was left of the daylight on this dreich day 🌧 I think the car driving passed probably thought I was bonkers 😂 The things we do for the perfect pic!!

This is great dish to make on a Monday using up leftover roast chicken
⠀
Using the same cheese sauce from my creamy cauliflower cheese @ https://www.gestationaldiabetes.co.uk/recipe/creamy-cauliflower-cheese/

Cheese sauce ingredients:
• 600ml double cream
• 200g grated cheddar
• 1 tsp butter
• 1 tsp mustard powder
• salt & pepper to taste
• pinch paprika (optional)
⠀
Pasta bake ingredients:
• 300g cooked wholewheat pasta
• 1 tbsp olive oil
• 600g of leftover cooked roast chicken, or fresh skinless chicken thighs or approx. 4 skinless chicken breasts
• 2 medium leeks (topped, tailed & chopped)
• 6 rashers of smoked streaky bacon (sliced)
• a few sprigs of flat-leaf parsley
• salt & pepper to taste
⠀
Recipe:
• Preheat the grill (or it can also be cooked in the oven)
• Cook and drain the pasta and make the cheese sauce as per the cauliflower cheese recipe and set both aside
• fry the bacon pieces in a drizzle of olive oil in a pan, then set aside when slightly crispy
• if not using leftover roast chicken, dice the fresh chicken and fry in the same pan that the bacon was cooked in until cooked through, then set aside with the bacon
• using some more olive oil, fry the leeks until they are softened
• Place the pasta, leeks, chicken and bacon into an ovenproof dish, add a pinch of salt & pepper and stir
• Pour over the cheese sauce and combine so that all the ingredients are covered
• Sprinkle with grated cheddar
• Place under the grill or in the oven to cook until the cheese on top is melted, browning and bubbling
• Sprinkle with chopped flat leaf parsley and serve with a big green side salad
⠀
Obviously this recipe can be adapted to suit with different vegetables. If making this without meat, be careful over the portion of pasta eaten. Ideally add Quorn and mushrooms as a substitute.
⠀
⚠️ Avoid adding higher carb vegetables such as sweetcorn, peas and carrots as alongside the pasta this will make the dish too carb heavy ⚠️
⠀
This dish is great to make then have re-heated for lunches. Re-heating cooked pasta also helps lower the impact the carbs have on your blood glucose levels!

These pizzas are a favourite in the Facebook group.

Why? What’s so good about them?
⠀
Well they are SO quick and easy to make (the same amount of time it would take to cook a fresh or frozen pizza), they taste as good as a ‘normal’ pizza AND they give great blood sugar levels! So what’s not to like?!

My kids love making these. If you have little ones then have some fun together creating some yummy pizzas together!
⠀
The base is a tortilla wrap. I recommend going for a wholemeal wrap (and compare the total carbs per wrap, as you’ll be surprised how much they can differ. One of the lowest I’ve found is Mission Deli wholemeal wraps). If you struggle with wheat or need a gluten free alternative, then try a BFree Sweet Potato wrap instead. I often use these and they are even lower carb than the wholemeal ones!

I went far too long without any help following the birth of my second baby and I regret not getting help sooner. Don’t be ashamed, don’t be scared. Did you know that there may be links between mental health and Gestational diabetes?
⠀
A 2016 NIH study of 2,477 pregnant women found a two-way link between depression and GDM, with women who reported feeling depressed during the 1st two trimesters being nearly twice as likely to develop GDM. The author noted that although obesity is known to increase the risk of GDM, the likelihood of GDM was higher for non-obese women reporting depression.

A 2018 Finnish study of 1,066 women with no previous mental health issues, found that 16% of mothers who had GDM suffered postpartum depression compared to 9% who didn’t have GDM.
