If you like a bit of spice in your life, then this Kickin’ Coleslaw should not disappoint! Kickin’ Coleslaw is like regular coleslaw, perfect for serving as a side dish, but this one packs a chilli kick!

Kickin’ Coleslaw

Ingredients
- ¼ medium white cabbage thinly sliced or grated
- ¼ medium red cabbage thinly sliced or grated
- 2 large carrots peeled and julienned or grated
- ¼ large onion (optional) thinly sliced or grated
- 1 tbsp pickled jalapeños diced
- 1 whole red chilli finely sliced
- 1 medium lime juice only
- 125 grams mayonnaise (or vegan mayonnaise)
- 2 tbsp double cream (or Elmlea Plant-Based Double Cream)
- 1 tbsp jalapeños pickle juice
- 1 tsp curry powder
- 2 tsp cumin seeds
- 1 tsp mustard seeds
- 1 good pinch salt and ground black pepper to taste
- 1 tsp fresh coriander leaves chopped (or chives, or parsley)
Instructions
- Finely chop/grate/julienne the veggies and place in a bowl
- In another bowl, add the mayonnaise, lime juice, double cream, pickle juice, curry powder, cumin seeds and mustard seeds, and stir until fully combined. Taste and season to your liking
- Pour the mayonnaise dressing over the vegetables and toss gently to evenly coat. Garnish with plenty of fresh chopped coriander, chives or parsley, a few slices of chilli and some more cumin seeds
