Ingredients

  • ¼ medium white cabbage thinly sliced or grated
  • ¼ medium red cabbage thinly sliced or grated
  • 2 large carrots peeled and julienned or grated
  • ¼ large onion (optional) thinly sliced or grated
  • 1 tbsp pickled jalapeños diced
  • 1 whole red chilli finely sliced
  • 1 medium lime juice only
  • 125 grams mayonnaise (or vegan mayonnaise)
  • 2 tbsp double cream (or Elmlea Plant-Based Double Cream)
  • 1 tbsp jalapeños pickle juice
  • 1 tsp curry powder
  • 2 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 good pinch salt and ground black pepper to taste
  • 1 tsp fresh coriander leaves chopped (or chives, or parsley)

Instructions

  • Finely chop/grate/julienne the veggies and place in a bowl
  • In another bowl, add the mayonnaise, lime juice, double cream, pickle juice, curry powder, cumin seeds and mustard seeds, and stir until fully combined. Taste and season to your liking
  • Pour the mayonnaise dressing over the vegetables and toss gently to evenly coat. Garnish with plenty of fresh chopped coriander, chives or parsley, a few slices of chilli and some more cumin seeds
