Mackerel, cream cheese & beetroot krisprolls

Smoked mackerel, cream cheese & beetroot krisprolls. A light and fresh lunch idea. Use fresh smoked mackerel fillets or tinned. Pagen Krisprolls work so well for this idea, but Ryvita or wholegrain crackers are a good choice too.

Mackerel is an oily fish. During pregnancy, it is advised that no more than two servings of oily fish are eaten a week.

Ingredients

  • 3 krisprolls
  • 2 tbsp cream cheese
  • ½ tsp horseradish sauce
  • 1 small beetroot sliced
  • 1 slice red onion or pickled onion, sliced
  • ½ handful salad leaves
  • ¼ medium lemon
  • 125 grams smoked mackerel
  • a pinch freshly ground black pepper

Instructions

  • Mix the horseradish in with the cream cheese, then add a thick layer to each krisproll
  • Add the onion, beetroot, salad leaves and top with flakes of mackerel
  • Finish with a squeeze of fresh lemon and a twist of fresh black pepper
