Menemen (Turkish scrambled eggs)

Add some fresh flavour to boring scrambled eggs and try this Turkish Menemen recipe! Sweet tomatoes, peppers, onion, garlic, fresh parsley and eggs. Fresh filling and delicious served with garlic-infused yogurt and a hot buttered tortilla wrap.

  • 2 tbsp olive oil
  • 2 medium onions sliced
  • 1 whole green pepper halved deseeded and sliced
  • 400 grams tinned chopped tomatoes
  • 4 large eggs
  • 1 small bunch fresh parsley roughly chopped
  • 6 tbsp Greek yogurt full-fat
  • 2 whole cloves of garlic crushed
  • 4 whole Mission Deli Wholemeal Wraps or BFREE wraps
  • 2 tsp butter


  • Heat the oil in a frying pan. Stir in the onions and pepper. Cook until they begin to soften
  • Add the tomatoes, mixing well. Cook until the liquid has reduced and season with salt & pepper
  • Crack the eggs into the pan and break them up with a spoon to create scrambled eggs, mixing through the tomato and pepper mixture
  • Beat the yogurt with garlic and season
  • Heat the tortilla wraps and spread with butter
  • Sprinkle the Menemen with parsley and serve from the frying pan with a dollop of the garlic-flavoured yogurt and a hot buttered tortilla


I’ve kept the ingredients to be like a traditional Turkish Menemen recipe, however, this recipe lends itself well to having some heat added to it too. If you enjoy spice, then feel free to add fresh chillies, dried chilli flakes, cumin and cayenne pepper to your liking, or even add a splash of hot sauce! Adapt it to your liking.
