This ultimate prawn cocktail is a wonderful retro starter for Christmas Day or it makes for a delicious salad on its own. Sumptuous Marie rose sauce dressing with plenty of cooked prawns, avocado, cucumber and salad leaves dressed with fresh lime. Zingy, fresh and perfectly paired.

Ingredients
For the Marie rose sauce
- 10 tablespoon fromage frais
- 3 tablespoon Heinz No Added Sugar Tomato Ketchup
- 5 tablespoon mayonnaise full-fat
- 1 teaspoon Worcester sauce
- ½ teaspoon tobasco sauce (optional)
For the Prawn Cocktail
- 300 grams cooked prawns
- 100 grams cucumber de-seeded, cubed
- 1 good pinch freshly ground black pepper
- 2 tablespoon lime juice
- 1 tablespoon white wine vinegar
- 1 teaspoon dill fresh, chopped, or dried
- 2 medium avocado pitted and diced
- 2 handfuls watercress or salad leaves
- 4 large crevettes cooked, shell on (optional)
Instructions
For the Marie rose sauce
- Add fromage frais, ketchup, mayonnaise, pepper, Worcester sauce & Tobasco sauce into a bowl and stir until fully combined. Taste and adjust ingredients to your liking
For the Prawn Cocktail
- Add the prawns into a dish, cover with a tbsp of freshly squeezed lime juice, a twist of black pepper and set aside
- Slice the cucumber in half lengthways, scoop out the middle and discard. Chop the cucumber into small pieces, place into a bowl and cover with white wine vinegar and dill, then set aside
- Slice the avocados in half, remove the stone, scoop from the skin and then dice into small pieces. Add to a bowl and cover in a tbsp of freshly squeezed lime juice and a twist of black pepper
To assemble the Prawn Cocktail
- Add a spoonful of Marie rose sauce to the bottom of a glass, cover with watercress or salad leaves
- Drain the white wine vinegar from the cucumber, then add a layer of cucumber pieces onto the watercress
- Cover with a layer of avocado
- Cover with cooked prawns
- Finish with a good serving of Marie rose sauce and garnish with a cooked crevette, cooked prawn or slice of lime
