A classic Quiche Lorraine, but without the carbs. Cheese, bacon pieces, and onion. This quiche is perfect for meals, or snacks and can be eaten hot or cold. Perfect for picnics and easy lunch box lunches.

Ingredients
- 200 grams bacon lardons smoked, or unsmoked (or streaky bacon, sliced)
- 1 medium onion diced
- 2 large eggs
- 250 ml single cream
- 125 grams cheddar grated
- 1 good pinch salt
- 1 good pinch freshly ground black pepper
- ½ tsp butter (or oil) for greasing the dish
- fresh chives chopped for garnishing (optional)
Instructions
- Preheat the oven to 180°c (fan)
- Add the bacon to a frying pan on medium-high heat and cook to render the fat down
- Once the bacon pieces are cooked, remove from the pan and drain on a piece of kitchen towel, leaving some of the bacon fat in the pan for cooking the onions
- Add the chopped onion to the pan and cook until softened
- Grease a flan dish/tin with butter or oil and place the cooked bacon pieces and onion in the bottom
- Whisk the eggs, cream, salt & pepper together well
- Pour the mixture over the onion and bacon
- Top with grated cheese and deocrate with some cooked bacon pieces.
- Place the quiche in the center of the oven to cook for 25-30 minutes or until risen and golden on top. Garnish with chopped fresh chives. The quiche can be served immedicately or cooled, covered and stored in the fridge and eaten cold
