Ingredients

  • 200 grams bacon lardons smoked, or unsmoked (or streaky bacon, sliced)
  • 1 medium onion diced
  • 2 large eggs
  • 250 ml single cream
  • 125 grams cheddar grated
  • 1 good pinch salt
  • 1 good pinch freshly ground black pepper
  • ½ tsp butter (or oil) for greasing the dish
  • fresh chives chopped for garnishing (optional)

Instructions

  • Preheat the oven to 180°c (fan)
  • Add the bacon to a frying pan on medium-high heat and cook to render the fat down

  • Once the bacon pieces are cooked, remove from the pan and drain on a piece of kitchen towel, leaving some of the bacon fat in the pan for cooking the onions

  • Add the chopped onion to the pan and cook until softened

  • Grease a flan dish/tin with butter or oil and place the cooked bacon pieces and onion in the bottom
  • Whisk the eggs, cream, salt & pepper together well

  • Pour the mixture over the onion and bacon

  • Top with grated cheese and deocrate with some cooked bacon pieces.

  • Place the quiche in the center of the oven to cook for 25-30 minutes or until risen and golden on top. Garnish with chopped fresh chives. The quiche can be served immedicately or cooled, covered and stored in the fridge and eaten cold
