Cauliflower Cheese Garlic Bread
A great low carb side dish to curb that garlic bread craving!

Ingredients
For the cauliflower cheese base

For the cauliflower cheese base
  1. Preheat oven to 200c
  2. Rinse the cauliflower, remove the leaves and separate the florets into smaller pieces. Place cauliflower florets into a food processor and pulse until you create a rice like texture
  3. Tip the cauliflower into a bowl, cover with cling film and microwave on high for 5-6 mins or until softened, then set aside to cool
  4. Once cooled, place the cauliflower into the middle of a clean cotton tea towel or muslin cloth. Gather the edges of the cloth and scrunch/twist the top around. The cauliflower should be sitting in a ball in the cloth and you should keep twisting and squeezing to remove as much liquid as possible. It’s important to squeeze out as much liquid as possible. The drier the cauliflower, the better the ‘bread’ base will be!
  5. Add the cauliflower, eggs, parmesan, oregano, salt & pepper to a bowl and combine well
  6. Line a large tray or 2 smaller ones with baking parchment paper greased lightly with some butter
  7. Divide the mix into 2 equal size balls, and flatten out onto the trays to about 0.5cm thickness using your hands or a spoon
  8. Place in the oven to cook for 15-20 minutes or until the edges are starting to brown slightly
For the garlic cheese topping
  1. Combine the garlic, butter and cheeses in a bowl
  2. Remove the ‘cauliflower cheese bread bases’ from the oven and cover with the garlic cheese topping, spreading evenly
  3. Place the cauliflower cheese bread back into the oven and cook until the cheese has melted and is bubbling
  4. Slice into pieces and serve!
