Roasted Garlic Hummus

One of my favourites during my GD pregnancies is hummus (or is it houmous?!) Great for snacking on with chopped vegetables it was something I always kept in the fridge.  I have a basic hummus recipe that I use, but this recipe is packed with sweet roasted garlic for a richer flavour.

  • Food processor or hand blender

  • 1 whole garlic
  • 400 grams tinned chickpeas drained and rinsed
  • 3 tbsp tahini
  • 50 ml olive oil plus extra for drizzling
  • 1 large lemon, juice only
  • 1 tsp mixed seeds (optional)

  • Preheat the oven to 180°c (fan)
  • Place the whole garlic bulb (unpeeled) on a baking tray, drizzle with a little olive oil and roast for 35-40 minutes and then set aside to cool
