Spanish Frittata
A great way to use leftovers. This frittata can be made with all your favourite ingredients and makes for a great lunch, snack or dinner




Servings: 4 people

Ingredients
- 500 grams cooked potatoes (use leftover cooked potatoes)
- 1 medium onion peeled and chopped
- 3 tbsp flatleaf parsley chopped
- 6 medium eggs
- 100 grams ham chopped (optional)
- 100 grams cheese grated (cheddar and mozzarella work well)
- 1 tsp olive oil for cooking
- 1 good pinch salt and ground black pepper for seasoning
Instructions
- Slice the potatoes into thick slices or chunks
- Soften the onion in a frying pan with some olive oil on a low heat
- Beat the eggs in a separate bowl
- Add the potatoes, onions and ham with the parsley and plenty of salt and pepper into the egg and mix
- Heat a little olive oil in a frying pan. Tip everything into the pan and cook on a moderate heat, using a spatula to shape the frittata
- Sprinkle grated cheese on top and place under the grill to golden
- Serve a slice of frittata warm with a mixed green and avocado salad dressed in lemon juice
Notes
Leftover frittata can be eaten cold the following day and makes a great GD friendly snack. The ingredients can be changed to whatever you fancy and it's a great way of using up leftover meat and vegetables.
