Ingredients
- 3 medium eggs
- ½ small onion finely chopped
- 1 medium tomato (optional) deseeded and diced
- 1 whole green chilli finely chopped, seeds removed
- 2 tablespoons fresh coriander leaves chopped
- ½ teaspoon chilli powder mild or hot, to your liking
- ½ teaspoon ground turmeric
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- a good pinch salt and ground black pepper
Instructions
- Heat ½ tablespoon of oil in a large frying pan on medium heat. Add the chopped onions, tomato, green chillies, coriander, chilli powder and ground turmeric and cook until softened and fragrant
- Break the eggs into a bowl or jug, whisk lightly and season
- Add the other ½ tablespoon of oil to the pan, then pour the egg mix in. Give it a quick swirl making sure to distribute it evenly across the pan. Cook the underside for one minute over medium heat until it sets, then fold the omelette over to continue cooking for a minute
- Serve the omelette with a squeeze of lemon juice and spoonful of sour cream, yogurt, or my vegan sour cream
