Ingredients

  • 2 large steaks beef or venison
  • 2 tsp butter
  • 1 good pinch salt and ground black pepper
  • 100 ml beef stock hot
  • 1 whole clove of garlic crushed
  • 1 tbsp Worcester sauce
  • 1 tbsp Dijon mustard or wholegrain mustard
  • 150 ml double cream
  • ¾ tsp black peppercorns crushed (or freshly ground black pepper)
  • 1 handful fresh parsley finely chopped

Instructions

  • Take the steaks out of the fridge to allow them to come up to room temperature while you chop your parsley and prepare your ingredients. Season the steaks with salt and black pepper and rub the butter directly onto the steaks
  • Bring a pan up to high heat, then add the steaks and cook to your liking
  • Remove the steaks from the pan, cover and allow to rest while you make the peppercorn sauce
  • Add the hot beef stock into the pan that steaks were cooked in, bring to the boil and reduce by half
  • Add the crushed garlic, Worcester sauce, Dijon mustard, double cream and crushed peppercorns/ground black pepper. Stir well and bring to the boil. Season with salt to your taste and continue cooking until it is the consistency you like
  • At the end, stir through the chopped parsley (reserving some for garnishing if you wish)
  • Serve over the steaks and add leftover sauce to a jug

Notes

Here I used a beef fillet steak and a ribeye steak. I served with 2 x  Aldi Cauliflower cheese croquettes as the starchy carb on the plate, alongside steamed green beans and broccoli
