Ingredients

  • ½ medium cucumber finely sliced

Dressing

  • ½ teaspoon salt
  • 1 teaspoon xylitol or erythritol sweetener
  • 3 tablespoons rice vinegar (or apple cider vinegar)
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame seed oil

Garnish

  • 1 teaspoon sesame seeds
  • ⅛ teaspoon dried chilli flakes

Instructions

  • Finely slice the cucumber (as thin as possible) and set aside
  • Mix together the dressing ingredients then pour over the cucumber slices and coat evenly
  • Garnish with sesame seeds and chilli flakes to your liking and serve immediately

Notes

This salad should be eaten straight away; otherwise, the cucumber goes soft and mushy.
