𝐃𝐚𝐲 𝟔 - 𝐋𝐨𝐰 𝐂𝐚𝐫𝐛 𝐒𝐜𝐨𝐭𝐭𝐢𝐬𝐡 𝐒𝐭𝐞𝐚𝐤 𝐏𝐢𝐞 🏴󠁧󠁢󠁳󠁣󠁴󠁿

This low carb Scottish Steak Pie is based on a traditional Scottish steak pie that I was introduced to after meeting my husband and enjoying steak pie bought from the butchers to eat on New Years Day with his family, which is a tradition for many Scots.
⠀
Rich thick beef gravy and succulent pieces of melt-in-the-mouth beef, there is no better beef pie than a Scottish steak pie. Traditionally it is topped with a puff pastry lid, but to create a low carb version I have used 2 sheets of filo pastry instead to give that buttery crisp pastry, but with much less carbs than puff pastry. This recipe is packed with beef so it is a great pairing tool for the carbs in the filo pastry and any vegetable accompaniments.

The key to the rich gravy sauce in this recipe is time and gentle cooking. It can be cooked in a slow cooker to give an even richer taste and be more cost effective using cheaper cuts of diced beef.

This cheats fish pie is a lovely creamy, deliciously cheesy fish pie, suitable for the whole family and a great recipe for wee ones!

It’s a cheats fish pie as I’ve used a couple of store bought items to make this a faster and easier dish to prepare for busy families.
⠀
Here are the ‘cheats’ that I use in this recipe:
⠀
🐟ASDA fresh fish pie mix which is mixture of skinless and boneless cod, smoked Alaska pollock and salmon pieces (340g)
🍤Tesco Bay Fishmongers King Prawns (150g)
🧀Philadelphia full fat Soft Cheese with Garlic & Herbs (170g)
🐟Knorr fish stock cube
🥔Aunt Bessie’s Frozen Mashed Potato (650g)

Mashed potato is not low carb, but by adding plenty of butter and cheese (you can even add some double cream if you wish) this helps to pair the carbs in the potato.

If you do not tolerate mashed potato well, you could swap to use thin sliced skin-on new potatoes, sweet potato mash, or another vegetable mash (cauliflower, celeriac, or root vegetable mash). You could also substitute the potato and use a sheet of filo pastry instead.

This creamy chicken pie is comfort food at it’s best! Chicken, bacon (or ham), mushrooms and leeks cooked in a super creamy sauce, topped with crisp buttery filo pastry… mmmmmmm!

You can of course swap the chicken for Quorn pieces if you’d like to make this pie vegetarian or omit the bacon/ham if you don’t eat pork.

The chicken, bacon/ham, double cream, butter and sesame seeds all help to pair the carbs found in the small amount of filo pastry and any additional starchy carbs added such as a couple of small skin on new potatoes.

I’ve been wanting to make some more low carb bis I’ve been wanting to make some more low carb biscuit recipes for the website for some time, but I have a big problem with low carb biscuits... they are always too soft

My favourite cookies that I bake with my boys are nice & crisp on the outside and slightly gooey in the middle, but these cookies use a TON of sugar (in fact they use 2 types of sugar) plus white flour and so I really wanted to find an alternative and one that could be shared with you ladies with gestational diabetes too #WinWin

After lots of playing around with different ingredients, used in different amounts and different ways, I have finally created 2 new cookie recipes which I’m happy with and all 3 boys approved of (always a good sign) 👍🏻🍪

Whilst they aren’t quite as crisp as my home baked Millie’s cookies dupes, these are the best I’ve found so far! They will definitely help with those sugar & carb cravings without spiking blood glucose

I’ve had to stop following a lot of med professionals accounts on Instagram as it’s really starting to anger me that they are using GDM as a condition to make money (on top of their PAID jobs!)

When I launched my GD UK membership for extra recipes & meal plans I got a lot of abuse over ‘charging GD women for information’. But as a stay-at-home Mum I needed a way to fund a professional website & my work involved (it’s just me, not a team of people working behind the scenes or group of researchers and I have to cover the costs involved). BUT it has always been the extra convenience that is in the membership; EXTRA recipes & meals plans at a small cost of £5/£7 a month with a min 1 month fee (not the amounts that many of these webinars are charging for BASIC knowledge)

All the information you NEED to know to follow a great GD diet & a wealth of other evidence-based information from diagnosis through to birth & beyond is absolutely FREE for anyone to use. I would never charge for that info as it should be readily available for free to anyone that needs it!

I get so many emails from private dietitians/nutritionists who want to collaborate with me but this sadly is not for the benefit of anyone but making money for themselves & many of which want to alter some of the info I give, being professionals & ‘knowing more than me’

Please note: I will not now nor will I ever sell out to a private dietitian/nutritionist/company who wants to change my information & charge GD or diabetic pregnant mothers for the pleasure of providing basic dietary info. This is not what Gestational Diabetes UK is about. It is about helping and supporting as many pregnant women with diabetes as possible for FREE so that they can achieve the best possible outcomes alongside their NHS teams 🙌🏼

This vegan keema (or kheema) pie is an Indian-spiced plant based take on traditional shepherds pie.

A warm and spicy vegan mince keema, topped with a turmeric infused creamy coconut sweet potato mash.
⠀
By using a vegan mince which is high in protein, coconut oil and coconut cream, this helps to pair the carbs found in the sweet potatoes and peas.

You can look at GD as a barrier to everything you expected and wanted, OR you can take the knock down, stand up, brush yourself off and make the best out of it. After all this is your pregnancy and before you know it, that wee precious bundle will be staring up at you from your arms.

I know that GD means making sacrifices, I know that it sucks to stab your finger multiple times a day, to have to plan every single thing that passes your lips and I know it’s scary and daunting if you’re told you now need to start injecting insulin, or you are no longer ‘allowed’ that water birth in the midwife led birthing unit you’d planned. BUT with each single step of this crazy GD journey, know that you’re not alone and nothing is impossible (we might just have to tweak things a bit from your perfect pregnancy plan)

Diet, hydration and exercise also play a huge part in the digestive heath and bowel movements.

But how can you remedy this problem when you have gestational diabetes WITHOUT spiking blood sugar levels?

💧 Drink plenty of water
🥦 Eat more green leafy veg
🥄 Add flaxseed or chia seeds into your diet
🍋 Drink hot water & lemon
☕️ A cup of real coffee in the mornings, but stay within your caffeine amounts for the day
☝🏻 Raise feet onto a stool when trying to 💩
🏃🏾‍♀️Try to stay active!
👩🏽‍⚕️ Laxatives – if natural remedies are not working then make an appointment with your GP to get a prescription for laxatives which are suitable for use during pregnancy. Commonly prescribed laxatives are Fybogel, Movicol & Lactulose (Lactulose CAN be taken with diabetes due to the way it absorbs in the bowels)

‼️AVOID the following as they will cause high blood sugar levels:
⚠️ Prunes or prune juice
⚠️ Dried fruits; figs, apricots, dates, raisins e.t.c
⚠️ Fruit juices
⚠️ High fibre breakfast cereals e.g. Weetabix, All bran e.t.c
⚠️ Molasses or sugared water

This gorgeous lower carb roasted butternut spinach ricotta & feta pie is a simply scrumptious vegetarian pie! The filo pastry top is crisp, crunchy and flaky and the filling moist sweet and tangy. What’s not to love?!

The cheese, pine nuts and poppy seeds all help to pair this dish. Because butternut squash is a higher carb vegetable and alongside the white flour Filo pastry, you should not serve this dish with any other starchy carbs.

Unfortunately it’s something I hear from GD mums in my support group all the time and more often than not it is straight from the mouth of a healthcare professional 🤨

So I ask you, what does a woman with gestational diabetes look like?
... overweight?
... black, Asian, or Middle Eastern?
... ‘older’?
... pregnant with multiples?

These things are known risk factors for developing GD but I need to make something clear (excuse me, I’m going to shout)

𝗔𝗡𝗬 𝗣𝗥𝗘𝗚𝗡𝗔𝗡𝗧 𝗠𝗢𝗧𝗛𝗘𝗥 𝗖𝗔𝗡 𝗕𝗘 𝗗𝗜𝗔𝗚𝗡𝗢𝗦𝗘𝗗 𝗪𝗜𝗧𝗛 𝗚𝗘𝗦𝗧𝗔𝗧𝗜𝗢𝗡𝗔𝗟 𝗗𝗜𝗔𝗕𝗘𝗧𝗘𝗦!

In a survey I conducted in 2018 of 1,878 GD Mums, I found 𝗼𝘃𝗲𝗿 𝗛𝗔𝗟𝗙 (𝟱𝟮%, 𝟵𝟳𝟳 𝘄𝗼𝗺𝗲𝗻) 𝗱𝗶𝗱 𝗡𝗢𝗧 𝗵𝗮𝘃𝗲 𝗮 𝗕𝗠𝗜 𝗼𝗳 𝟯𝟬 𝗼𝗿 𝗺𝗼𝗿𝗲

I also found that 9.8% (184 women) had 𝗡𝗢 known risk factors at all. Bearing in mind that in the majority of hospitals across the UK & ROI only higher risk women are screened for GD, I believe this figure may actually be much higher

Risk factors are just that, a factor that makes the mother higher risk of developing GD. It does not mean a mother will be diagnosed with GD if she has these risk factors and likewise it does not mean only women with these risk factors are susceptible
