A busy couple of days at the office (my kitchen)

Autumn is here, it’s wet it’s windy and so I’m sure many of you would love a hot pudding to brighten your day!
⠀
I am working on GD Christmas recipes and wanted to create a low carb pudding that will look the part sitting on the table, tastes amazing (even if it’s not actually a Christmas pudding) but is safe to eat without causing any crazy spikes in blood glucose levels and I decided whilst I was at it, I’d play with ideas to make a few old classics (but without all the sugar!)

Hands up who felt like a fish out of water when diagnosed with gestational diabetes and trying to figure out what to eat?

I see so many Mums struggling with how many grams of carbs to eat per meal or snack, spending hours in the supermarket trying to read every single nutritional label only to end up feeling frustrated, upset and even more confused.

Should it be total carbs, or total sugar that we look at and what’s the limit?
⠀
Should it be low fat and fat free, or full fat products?
⠀
Should it be lots of healthy fruits and grains?
⠀
Should we just eat what we normally do, then test to see what levels we get?
⠀
Should we pick gluten free or sugar free products?
⠀
It’s soooo confusing! 🤔

I’m away on holiday this week for Scottish half term with Patty (hubby) and our boys. It was an Easter break we had to move due to Covid-19

This means I won’t be posting much this week (as it’s only myself that posts on here) and internet access is very limited and no phone signal. How will I cope 🤪 TBH I’m looking forward to having a much needed break with my family

I’m delighted to be working alongside @icpjenny Jenny Chambers Founder of @icpsupport (an organisation for ICP or Intrahepatic Cholestasis of Pregnancy) and researchers at Kings College London regarding some potential exciting new research!

Dr Sian Chivers is a paediatric doctor who specialises in the baby's heart. She also has a special interest in diabetes during pregnancy and how this condition affects the baby's heart, so she would like to conduct a study that looks at what could be done to better protect the baby during a diabetic pregnancy. She would love to hear your views on the proposed study she hopes to do and has put together a short survey for you to complete.

So why is it so important that gestational diabetes is diagnosed?

Unfortunately there is much more to be concerned with than ‘𝚓𝚞𝚜𝚝 𝚊 𝚋𝚒𝚐 𝚋𝚊𝚋𝚢’ with gestational diabetes
⠀
Undiagnosed or poorly controlled gestational diabetes can cause many complications and with October being loss awareness month and 9-15 Oct being baby loss awareness week, I feel it is important to share a harsh reality of undiagnosed GDM... stillbirth
⠀
For diabetes week in 2018 I shared Leanne & Matt’s story, which is the pregnancy and birth of their son William who was born sleeping due to undiagnosed GD

I also share Abby’s story and Charly’s story. Two more mothers that experienced stillbirths due to undiagnosed gestational diabetes
⠀
I don’t post these stories to scare and worry people, but to try to raise awareness over gestational diabetes diagnosis and how important it is

An important thing to note (especially if you are reading this and have been diagnosed with gestational diabetes) is that 𝘄𝗼𝗺𝗲𝗻 𝗵𝗮𝘃𝗲 𝗡𝗢 𝗶𝗻𝗰𝗿𝗲𝗮𝘀𝗲 𝗶𝗻 𝘀𝘁𝗶𝗹𝗹𝗯𝗶𝗿𝘁𝗵 𝗿𝗶𝘀𝗸 𝗜𝗙 𝗡𝗮𝘁𝗶𝗼𝗻𝗮𝗹 𝗚𝘂𝗶𝗱𝗲𝗹𝗶𝗻𝗲𝘀 𝗮𝗿𝗲 𝗳𝗼𝗹𝗹𝗼𝘄𝗲𝗱 𝗳𝗼𝗿 𝘀𝗰𝗿𝗲𝗲𝗻𝗶𝗻𝗴, 𝗱𝗶𝗮𝗴𝗻𝗼𝘀𝗶𝘀 𝗮𝗻𝗱 𝗺𝗮𝗻𝗮𝗴𝗲𝗺𝗲𝗻𝘁 𝗼𝗳 𝗚𝗗𝗠. GESTATIONAL DIABETES DIAGNOSIS DURING COVID-19 FOR MOTHERS WHO HAVE HAD PREVIOUS GD PREGNANCIES...

The NICE guidelines since Feb 2015 have always recommended early self monitoring for mothers who have had previous GD pregnancies OR a GTT
⠀
The current guidance due to COVID-19 is that GTT should be replaced with a HbA1c blood test or fasting test which avoids waiting rooms full of women to be tested, so it is completely understandable
⠀
However, as feared, we are seeing a huge increase in cases where mothers are being told they are negative for GD, yet are experiencing GD related symptoms and/or high blood glucose levels when self monitoring at home, many of which are struggling to get support, diagnosis or treatment 💔
⠀
An email response from the RCOG Covid-19 Support Team was helpful. They agreed that if the mother is experiencing higher than NICE recommended BG levels (BGL at or in eccess of fasting >5.3mmol/L and >7.8mmol/L one hour postprandially), then this should be reported to their diabetes antenatal team and the mother SHOULD receive the support and care she needs for GDM and if they feel their concerns are being ignored then they recommend raising this with other members of the maternity team, or with the hospital Patient Advice and Liaison Service (PALS)

Many of my ladies are fighting a battle to be diagnosed and supported and we do not want to see an increase in diabetic related birth complications due to misdiagnosis or late diagnosis
⠀
Please do not delay the support and help these mothers need by turning them away to be tested later in pregnancy 🙏🏼

It may be hard to think of gestational diabetes diagnosis as a blessing when you’re fed up with pricking your finger so many times a day, when your life revolves around what to eat, when to eat and then watching that glucose monitor count down to give you a reading which could make or break your day.

It may be hard to think of gestational diabetes diagnosis as a blessing when you’re walking into the hospital for yet ANOTHER appointment.

It may be hard to think of gestational diabetes diagnosis as a blessing when you’re sitting at the table where everyone is telling you to “go on, just have a some, it’s only a little bite and it won’t hurt you” while they all sit any enjoy theirs.
⠀
It may be hard to think of gestational diabetes diagnosis as a blessing when you’re told you need to start injecting yourself with daily insulin injections when you HATE needles.
⠀
It may be hard to think of gestational diabetes diagnosis as a blessing when you’re told that you can’t have the birth you wanted and had planned.
⠀
It may be hard to think of gestational diabetes diagnosis as a blessing when you’re told that you and your baby now have a higher risk of developing type 2 diabetes.
⠀
BUT, being diagnosed with gestational diabetes diagnosis IS a blessing. It’s a blessing as it gives us the opportunity to monitor and take care of our babies. The chance to make a difference before the high blood sugar levels take away our blessing, our ultimate goal; a healthy baby.

The chocolate mousse is a very popular recipe, but for those that aren’t huge chocolate fans, how about a something citrusy instead?

This recipe is so low carb and so high in natural fats that it can be eaten as a dessert straight after a meal and will actually help pair any carbs eaten in the meal!

I played around with mine, adding a small amount of digestive biscuit crumb, lemon slices and as we now have an abundance of lovely fresh eggs from our chickens I also made a batch of my sugar free lemon curd to pipe on top!

Southern Fried Chicken is one of my personal favourites and so it made sense to search the internet for that special secret blend of spices to get that certain fried chicken taste (but without using flour!)
⠀
Well after lots of searching and testing out a few different options, I think I’ve nailed a pretty good homemade low carb version of that special spice mix to use alongside my original chicken strip coating and create a low carb Southern Fried chicken recipe!

This recipe uses ground almonds instead of flour but hand on heart, you honestly will not know you are eating nuts!

Unfortunately, this recipe simply does not work as well when substituting almonds with other low carb flours such as coconut flour, and wheat flours are far too high in carbs to be used. But if you can eat almonds then I urge you to try this because it will really surprise you how good it is!

Crispy coated chicken strips, nuggets or goujons, all the crunch without the carbs of a normal breadcrumb or batter!

If you’re wanting something like chicken strips but find the coating on chicken pushes your blood glucose levels over the edge, especially when eaten alongside other carbs such as wedges or fries, then this recipe is definitely worth trying.

My boys absolutely LOVE these chicken strips and have no idea that they are not ‘normal’ breaded strips! A real winner winner chicken dinner! They are made with ground almonds, but I promise that you cannot tell they are.

To keep the chicken extra tender I marinate the chicken in pickle juice before coating in the crumb.

Unfortunately, this recipe simply does not work as well when substituting almonds with other low carb flours such as coconut flour, and wheat flours are far too high in carbs to be used. But if you can eat almonds then I urge you to try this because it will really surprise you how good it is!
