A dish that I advise GD Mums to steer well clear of is sweet & sour. Just as the name suggests it’s sweet and that sweetness comes from copious amounts of dissolved sugar and often fruit juice too which is terrible for blood glucose levels

However I know it’s a dish that many love and although I’ve tried lots of low carb and sugar free recipes, I could never find one that was super sweet and sticky just like Chinese takeaway sweet & sour
⠀
That was until I was thinking about my sugar laden sweet and sour recipe made with pineapple or orange juice and my son asked for a drink and I had a crazy idea 💡 staring in my face... why not try to make a low carb, sugar free sweet and sour with no added sugar orange & pineapple squash?! 🍊🍍 Don’t knock it until you’ve tried it!

After a bit of playing around, I have created my BEST fakeaway low carb, no added sugar sweet & sour!

I warn you now, this is a sweet recipe just like the real thing, so if you’ve been sugar free for some time you may want to reduce the amount of sweetener or increase the amount of vinegar to suit your taste!

I know how many of you mention Chinese sweet & sour so I thought I’d make this one a free recipe for you all to try!

I used chicken in my recipe as that’s our favourite, but you can use pork, beef, prawns, tofu, Quorn or seitan
⠀
This recipe is low carb, contains no added sugar, is nut, gluten, dairy and egg free and can be made vegetarian or vegan

We all want to control gestational diabetes with diet alone, but unfortunately some of will need extra help AND THAT’S OK 👍🏻

Please don’t sit in silence struggling with higher than target blood glucose levels for too long 😖
⠀
A general rule of thumb used in many clinics is 3 or more higher than target levels since you last had your readings reviewed by your team 🔴🔴🔴
⠀
Just touch base with them and see what they say. It doesn’t necessarily mean they will start you on meds/insulin, they may be able to give you more support before that is needed 📞
⠀
However if you are advised to start Metformin or insulin please don’t feel bad, or guilty. Some of us no matter what we do WILL need that extra help. No one wants to take medications in pregnancy, but just like some of us needing iron tablets due to being anaemic, this is no different 🤷🏻‍♀️

BE KIND TO YOURSELF 💜

This also applies if you are currently on meds/insulin but continue to see over target levels. It can often take a lot of tweaking of doses before the benefit is seen and many will need to chase their levels with increased doses. The sooner you can lower and stabilise your blood glucose levels, the better, so please don’t sit in silence 🤐

Eggs are the perfect GD superfood! Breakfast for a diabetic mother doesn’t get much better than eggs (with the yolks!)
⠀
They are packed with protein, good fats, vitamins & antioxidants. They also contain choline (a B vitamin) which encourages normal brain development & prevents neural tube defects in baby. It’s been found that lack of choline in the mothers diet may contribute to placental dysfunction & the development of disorders related to placental insufficiency [Journal of Cellular Physiology, 2014] and with diabetes in pregnancy we have a higher risk of placental insufficiency, so doing anything we can possible to help avoid this is important

These little powerhouses of nutrients are reasonably cheap (compared to other sources of protein), they are readily available to purchase in most shops or from local farmers, take only minutes to prepare AND you can make so many different things with them!

A bit of a controversial post, but I feel I need to share:

This week I’ve stopped following a lot of professional dietitians & nutritionists on Instagram as I’ve seen a pattern forming. I do a post on a certain subject & they then do a post on the same subject. And this is happening over & over
⠀
Now I know I should probably be flattered (being a non professional who’s just a stay-at-home Mum) but the problem lies with that these professionals are all trying to get GD women to sign up to their courses, online tuition or services for hundreds of pounds/dollars
⠀
When I launched my GD UK membership for recipes & meal plans I got a lot of abuse over charging GD women for information. But as a stay-at-home Mum I needed a way to fund a professional website & my work involved (it’s just me, not a team of people working behind the scenes or group of researchers). BUT it has always been the extra convenience that is in the membership; extra recipes & meals plans at a very small cost of £5/£7 a month with a min 1 month fee (not hundreds that many of these courses etc are charging)

All the information you NEED to know to follow a great GD diet & a wealth of other information from diagnosis through to birth & beyond is absolutely FREE for anyone to use. I would never charge for that info as it should be readily available for free to anyone that needs it!

I get so many emails from private dietitians/nutritionists who want to collaborate with me but this sadly is not for the benefit of anyone but making money for themselves & many of which want to alter some of the info I give, being professionals & ‘knowing more than me’

Please note: I will not now nor will I ever sell out to a private dietitian/nutritionist/company who wants to change my information & charge GD or diabetic pregnant mothers for the pleasure of providing basic dietary info. This is not what Gestational Diabetes UK is about. It is about helping and supporting as many pregnant women with diabetes as possible for FREE so that they can achieve the best possible outcomes alongside the NHS 🙌🏼

Crispy Indian Okra (Bhindi)

Okra or lady’s fingers as they’re sometimes known can be a great vegetable to add to your GD diet (if you don’t take Metformin)
⠀
Okra is a source of potassium, vit B & C, folic acid & calcium. It’s low in cals & is packed with fibre
⠀
A study in 2012 [Therapeutic Effect of Okra Extract on Gestational Diabetes Mellitus Rats Induced by Streptozotocin, Zhao-Hua Tian et al.] found “Okra extract, rich in antioxidant substances, could avoid the excessive consuming of antioxidant enzymes, then, suppresses the oxidative stress and insulin resistance, thereby improving blood glucose level of GDM rats.”

(Please note, another study [2011, Hajera Khatun et al.] suggests that okra may block the absorption of Metformin, therefore if you currently take Metformin then you may not want to eat okra)
⠀
🛒Ingredients:
•175g fresh okra (or frozen baby okra, thawed & thoroughly dried)
•1 onion, finely diced
•1 green chilli, diced
•1 red chilli diced
•2 cloves of garlic, crushed
•2cm fresh ginger, finely grated
•2tbsp coconut oil or ghee
•0.5tsp cumin seeds
•0.25tsp turmeric
•salt to taste

👩‍🍳Recipe:
1. Wash the fresh okra, top & tail and slice into rounds. Leave them to dry on kitchen towel to ensure they are thoroughly dry
2. Melt 1tbsp coconut oil or ghee in a pan over med-high heat
3. Add the cumin seeds and once they begin to brown or splutter, add the onions and chilli. Fry for around 10 mins, or until the onions start to brown/caramelise
4. Add the crushed garlic, grated ginger & spices then stir well. Reduce the heat to medium, add the other tbsp of oil & the dry okra
5. Fry for 10-12 mins, or until the okra is dry & crispy

By using a vegan mince which is high in protein, coconut oil and coconut cream, this helps to pair the carbs from the sweet potato, peas & tomatoes

Fancy a change from plain roast chicken, why not try my Spiced Roast Chicken with Chorizo Roasted Veg
⠀
🛒Ingredients:
•a large whole chicken (or skin on chicken thighs - 2 per adult)
•200g ring of Chorizo (mild or spicy)
•1 whole lemon
•1 whole bulb of garlic
•3 tsp paprika
•1 tsp ground coriander
•1 tsp dried oregano
•0.5tsp garlic salt
•0.5tsp freshly ground black pepper
•0.25tsp chilli powder (optional)
•a good pinch chilli flakes (optional)
•2 tbsp olive oil
•1 large red onion
•1 aubergine
•1 red pepper
•1 yellow pepper
•1 large courgette
•400g new potatoes

You’ll need 2 roasting trays as this makes a large dinner that will serve 6 people (at least)
⠀
👩‍🍳 Recipe:
1. Cut the lemon in half. Create a basting paste by mixing the paprika, ground coriander, dried oregano, garlic salt, black pepper, chilli powder & flakes if using & a tbsp of olive oil & juice of half the lemon together, then brush all over the chicken
2. Separate the garlic bulb into cloves (leave the skin on) Smash a couple of cloves with the flat of a knife and place inside the chicken
3. Place the other half of lemon just in the opening of the chicken
4. Drizzle with some more olive oil, cover loosely with foil and cook for 1hr at 200c (fan)
5. Slice the new potatoes into halves and par-boil until just softening, drain and allow to steam dry in a colander
6. Slice the chorizo into chunks & add to a LARGE bowl or tray
7. Chop the aubergine, peppers, courgette and onion into large chunks & add to the chorizo
8. Remove the skin from the rest of the cloves of garlic & add into the bowl with veg
9. Add the new potatoes to the bowl. Season with salt & black pepper, drizzle over plenty of olive oil and stir around with your hands to evenly coat
10. After an hour, remove the foil from the chicken, baste with any pan juices and add some of the veg & chorizo around the chicken. Place back into the oven uncovered
11. Add any remaining veg & chorizo to another tray and place into the oven to cook
12. Check on the veg & chicken after 20 mins, turning the veg & chorizo, & baste the chicken (add a drizzle more olive oil if needed) Cook for another 20-30 mins or until cooked

A simple sentence that can break a mother and what are the words that hit the hardest?... “You FAILED”

then the thoughts...

...you failed the glucose tolerance test
...you failed this pregnancy
...you failed your baby
⠀
Y O U F A I L E D 👎🏻

I’m not sure why it has become the norm to say to a mother that she has ‘failed’ the glucose tolerance test? With all other tests in pregnancy, you get results and you’re told that you have a condition, or have tested positive.
⠀
Therefore I’d like everyone to share this message loud and clear:
⠀
“YOU HAVE NOT FAILED ANYTHING!”
⠀
This message of failure is what upsets so many mothers.
⠀
If you’re a midwife reading this and currently inform ladies that they have failed the GTT, please consider changing the way you inform patients of their glucose tolerance test results. Instead of saying that they have failed the test, simply let them know that the results show that they have gestational diabetes (I know many of you already do, so thank you 🙏🏼)
⠀
A positive result of GD means that due to hormones produced in pregnancy, the mother cannot use, or make enough insulin in order to keep their blood sugar levels at a low and stable level which is safe for the growing baby.
⠀
Let’s take the blame, guilt and bad feelings of failure away from mothers with GD.
⠀

My rainbow pregnancy [2014] I was diagnosed with GD at the start, despite losing 5st in weight

I was given much lower test targets <5.0 fasting <7.0 1hr post meals even though it was the same hospital [Cambridge] I attended with my 1st GD baby
⠀
I wanted to research more, learn & have a better GD pregnancy this time so set up my Facebook group to find other UK Mums with GD💙
⠀
Within a week I started Metformin but it caused terrible gastric upset, so it was stopped & I started 2 types of insulin again which they said would be inevitable the further into pregnancy anyway🤷🏻‍♀️

I was told I should be losing weight due to my high BMI, advised to eat a low fat/fat free diet & try M&S ready meals by the dietitian🤔
⠀
As a busy full time working mother who cooked from scratch currently following Slimming World, I wasn’t going to start buying M&S ready meals just for me to eat when I followed a healthy, real food diet
⠀
I worked at Cambridge University which meant I was in a position to be able to read lots of evidence-based research which wasn’t readily available for the general public to view & a💡switched on!
⠀
I was starting to learn about what other GD Mums were facing & struggling with & learnt that despite there being clear recommended guidelines set out by NICE, many hospitals did not follow them🧐
⠀
I moved to East Yorks, was given different targets to follow; fasting 4.0-6.0, 1hr post meals 6.0-8.0. They were AMAZED with my BG level control which were based on the lower Camb targets. I asked why they didn’t follow NICE guidelines (<5.3 fasting <7.8 1hr post) & was told women find it easier to remember 4-6-8!

I researched evidence around using a low carb high fat diet & put it to the test. It made a HUGE difference to my post meal levels & I shared info within my FB group members who also started to see the benefit themselves

My baby grew on 50th centile & they advised to induce at 38wks as per the NICE guidelines at that time with an option of balloon induction or pessary. I was happy with the info. given, was able to make informed decisions & choices🙌🏼

Hasselback Pizza Topped Chicken 🍕

If you want pizza but really struggle with carbs from wraps to make the GD friendly wrap pizza and cauliflower base pizza isn’t doing it for you, then try some Hasselback Pizza Topped Chicken 😋
⠀
Making cuts into the chicken to create a Hasselback means the toppings don’t just slide off the chicken and the flavours infuse into the chicken better 👌🏻
⠀
🛒 Ingredients:
•1 chicken breast per person
•1 tbsp tomato purée per chicken breast
•0.5 tsp dried oregano or mixed herbs
•grated mozzarella
•toppings of your choice
•light drizzle of olive oil
⠀
👩‍🍳 Recipe:
•cut slices 2cm apart into the chicken breast across the top, deep enough to add fillings without cutting completely through the breast
•add some tomato purée to each gap
•sprinkle some dried oregano/mixed herbs into each gap
•add sliced toppings into each gap (I used pepperoni & olives)
•sprinkle over grated mozzarella and/or cheese of your choice
•drizzle a small amount of olive oil over the top
•cover with foil & place in a pre-heated oven (200 fan) for 20 mins
•remove the foil & cook for a further 5-10 mins (possibly longer depending on the size of your chicken breast) until cheese is bubbling and chicken juices run clear when you cut into it

I served mine with some sweet potato fries with mayonnaise and half a tomato with a green mixed salad 🥗

These Hasselback Pizza Topped Chicken breasts work great with all the usual pizza toppings and you can give them a kick by adding chilli flakes, or sliced chillies too!

Another option is to create a paste from my Tikka Masala or Korma recipes to create a Hasselback Curry filled Chicken Breast

I get a lot of messages around leftover diabetes supplies following pregnancy.
We do have an area within our Facebook support group for mothers to advertise their leftover consumables *no prescribed medications* which are free to other mothers with GD in our group who may have to pay for their supplies (like in the Rep of Ireland), or to other mothers who have not been given glucose test monitors even though they have been diagnosed, or suspect they have GD. However you must be a member of our Facebook group to advertise there (link to the group in my bio @gestational_diabetes_uk )

For items such as insulin needles and in-date insulin you can send supplies in a Jiffy bag to IDDT (InDependent Diabetes Trust), which is the UK arm of an Australian organisation, IFL (Insulin For Life). This organisation helps poor children and young people with diabetes in developing countries

So rather than taking your in-date insulin back to your Pharmacy or GP where it will be destroyed, please send it on for others who are not so fortunate as ourselves to use

It may be hard to think of gestational diabetes diagnosis as a blessing when you’re fed up with pricking your finger so many times a day, when your life revolves around what to eat, when to eat and then watching that glucose monitor count down to give you a reading which could make or break your day.

It may be hard to think of gestational diabetes diagnosis as a blessing when you’re walking into the hospital for yet ANOTHER appointment.
⠀
It may be hard to think of gestational diabetes diagnosis as a blessing when you’re sitting at the table where everyone is telling you to “go on, just have a some, it’s only a little bite and it won’t hurt you” while they all sit any enjoy theirs.

It may be hard to think of gestational diabetes diagnosis as a blessing when you’re told you need to start injecting yourself with daily insulin injections when you HATE needles.
⠀
It may be hard to think of gestational diabetes diagnosis as a blessing when you’re told that you can’t have the birth you wanted and had planned.
⠀
It may be hard to think of gestational diabetes diagnosis as a blessing when you’re told that you and your baby now have a higher risk of developing type 2 diabetes.
⠀
BUT, being diagnosed with gestational diabetes diagnosis IS a blessing. It’s a blessing as it gives us the opportunity to monitor and take care of our babies. The chance to make a difference before the high blood sugar levels take away our blessing, our ultimate goal; a healthy baby.
