I’ve named this recipe Melinda’s Swedish Meatballs (köttbullar) as Melinda, a post GD Mum who lives in Sweden, very kindly offered to share the recipe with me after seeing my Ikea style Swedish Meatball recipe which is for that creamy meatball gravy/sauce…

Swedish meatballs! This recipe is specially for the lovely Jo at @gestational_diabetes_uk ❤️ A little background on Jo and her wonderful group and website…I’ve been blessed with 3 sons. My second son I had a very rough pregnancy and birth. I had uncontrolled gestational diabetes (the hospital forgot to tell me I had it!! That’s another story ?) and my baby was born very poorly. He’s fine now ❤️ Thanks to Jo’s wonderful advice, my third son was born safely as I controlled my gestational diabetes really well with her tips. Totally against NHS advice, which told me to eat cereal for breakfast and fruit as snacks! That’s what I did with my second son, I followed that NHS advice and it wasn’t right. The NHS do wonderful things but dietary advice for gestational diabetes is not one of them. Thank you Jo for keeping my sugar baby Orion safe ❤️ Enjoy! ? Ingredients

  • 250 grams beef mince (20% fat content)
  • 250 grams pork mince or substitute with more beef mince
  • 1 medium onion finely chopped
  • 50 grams breadcrumbs
  • 75 ml double cream (or single cream)
  • 1 large egg
  • 1 tsp fine salt
  • ½ tsp ground black pepper
  • ¼ tsp ground all spice (optional)
  • 1 tsp butter
  • 1 tsp olive oil

Instructions

  • Chop the onion very finely and cook in a little butter on a very low heat until soft and translucent, then set aside to cool
  • Add the cream to the breadcrumbs, mix and leave the breadcrumbs to swell for a few minutes
  • Add the all ingredients together and mix until just combined - take care not to over-mix. Then form into small meatballs
  • Fry in a mix of butter and oil over a medium heat, turning frequently until no longer pink in the middle - mine take around 10 minutes
